Frittatas (Mini Omellettes)

Frittata,as they're known in Italy and  is an egg-based dish similar to an  omelettes or quiche, either simple or enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs.Make a great lunch or supper for the family.The kids can take cold leftovers to school in their lunchbox.Its a great and easy recipe which you can make it with your children.They definitely love it.


1tsp Butter,softened
75g cooked ham, thickly sliced
75g cheddar cheese
30g bell pepper
6 chives,cut into small pieces (i used spring onion)
1/4 can cooked sweetcorn
6 large free-range eggs 4tbsp milk
salt to taste
pinch of pepper


  • Preheat the oven to 180c/160c fan/gas 4.Lightly grease six holes of a muffin tray with butter.If you're using a silicone muffin tray,put it on a baking tray so it's easier to handle.
  • Cut the ham  and pepper into small pieces.Grate the cheese on to a plate.Divide the ham,pepper,cheese,chives and sweetcorn between the holes in the muffin tray.
  • Break the eggs into a bowl,add milk and beat until evenly mixed.Season with salt and pepper.Transfer to a jug and ten carefully pour into the muffin holes. 
  • Cook in the oven for 15-20 minute or until just set.Leave to cool for 10 minutes, then turn out.Great to serve with salad

    1. Note:You can replace the ham with cooked chicken,sausage or flaked tuna-or leave it out altogether for veggie frittatas. Cooked peas and mushrooms can be used instead of sweetcorn.

      Brioche Roll Butter Pudding

      I bought a pack of brioche roll for Sashvik to try the taste but he is not keen to eat that.He munch it few times and throw it.So I thoughht to make something diffrent on it.Found the recipe on internet and try and taste it.Its really delicious.The main thing is Sashvik ate finish a  slice.Thats really worked.Im so happy.


      • 7/8 Brioche rolls

      • 1tsp Essense vannila
      • 300ml Semi skimmed milk
      • 300ml Low fat Crème Fraiche or double cream, your choice

      • 3 Large free range eggs

      • 60g Light brown sugar

      • 75g Dried Apricots, roughly chopped

      • 20g Sultanas

      • Low fat spread or butter  

      1.Cut the brioche rolls withways theere times

      2.Butter each slice and lay in the dish to cover the bottom

      3.Sprinkle on 1/3rd of the sultanas and apricots

      Repeat steps 1. 2. and 3.

      Whisk the eggs and set aside

      Pour the milk and crème fraiche/double cream and sugar into a large bowl and whisk until thoroughly combined

      Whisk the eggs and  vannila essense into the milk mixture

      Pour the mixture over the brioche slices

       Leave for 30 minutes to allow the mixture to soak into the brioche slices

      Bake in a preheated oven 170°C/325°F/Gas mark 3 for 40 minutes

      Serve warm


      Punugulu a simple and all time fav tea time snack in ANDHRA PRADESH.

      I saw this recipe in one of blogger.And keep it in my mind.Now its time to make and taste it.My quick fix Punugulu recipe that gets made with a leftover idli batter.Not bad at all its quick to prepare, easy, a very nice and crunchy snack for tea time.

      •  2 cups Idli dough 1 small Onion, chopped into small pieces
      •  4 green chillies, chopped into pieces
      •  Small piece ginger, chopped
      • 1/2 tsp cumin seeds
      •  Salt as required
      • oil for frying
      1. Pour idli batter into a bowl.
      2. Add onions , green chillies, cumin seeds, salt and ginger pieces and mixwell
      3. Heat oil , take a little spoon of batter and leave that into the oil.
      4. Fry them until it turns golden brown.

      Serve hot with chutney and hot tea or coffee.

      Mutton Briyani

      Within this two years life changed little by little.Times and days flew so fast.Being as wife,mum,daugther,daugther in law,sister,sister in law,aunty and employee is a precious job in the world.Even cant effort to spare time for blogging. Most of the time spend for house chores.

      Mind is always blowing for new recipes.I was really impressed with so many blogs. Exspecially indian foods,cupcakes and cakaes blogs. Hopefully i will back on track and post more feeds about the food i love to cook.

      After a huge crushed on my mind at last i decided to choose Mutton Briyani to celebrating this happiness.Briyani is a favorite dish of mine.Not only me but all of my family memebers loves my briyani.Always thought about my mum when i cook briyani.It was a memory we share while she was around with me in London.Simply can said she love the briyani i made.The Funny thing is she asked me to cook a takeaway briyani for my brother who live in Malaysia.But is not possible to cook briyani to takeway from London to Malaysia.

      Vinayaka Chaturthi 2010

      Ganesh Chaturthi or Vinayaka Chaturthi, is the birthday of Lord Ganesha, the God of wisdom, and auspiciousness in Hinduism. Vinayaka Chaturthi 2010 date is September 11. The 12-day festival ends with the immersion (Visarjan) of the idol of Ganesh on Ananta Chaturdasi day. Lord Ganesh is one of the most popular Hindu Gods and is worshipped around the world and is slowly becoming the face of Hindu religion.

      This year I prepared Sweet Ponggal,Ven Ponggal,Lemon Rice,Modakam(Modak),Chick peas sundal,Sesame Laddu,Mini Uppu Kozhukattai and Appalu as Prasadam or Naivedyam for the Pooja.This is first time ever i did a lots of prasadam.I'm really proud of myself.Its all go to my mum and Lord Vinayaka to give strength for me..
