Garlic & Basil Roasted Chicken


 Hello Hello!! Do you know how happy I am.I was so excited when I saw my blog had about 800+ visitor for the first time yesterday.Its may sound silly but this so precious for me.Actually I try myself to increase my blog traffic but its all in vain.Thank god  I found a good path but its all in my hand to deliver a good food with a gorgeous pictures,am I right??..Although the all credits go to you for your supports and the encouragements.A  heartfelt Thank You for being here and the continuous visit upon on my blog.You people made my day.I am  happy girl.

Today I am sharing a simple and comfort dish.A garlic basil roasted chicken with potatoes and butternut squash.The hunger rescuer on a lazy and gloomy day.Oh gosh,tummy started rumbling.


Garlic & Basil Roasted Chicken
Ingredients:
4 Chicken tight and drumstick
1 small Butternut squash- peel,deseeded  and chopped
2 Red onion - cut into wedges
1 bulb Garlic-slightly crushed
2.5 tbsp Basil herb- chopped
10 New potatoes
Salt
Pepper powder
Olive oil


Method:

1.Preheat the oven 180°C.

2.Place everything on a roasting tray, drizzle some olive oil, seasoned well and mix together, then roast for 40-50 minutes until the chicken is cooked. Serve with steamed beans or peas or even with a green salad.

Tom Yam Scented Chicken Croquette


I never imagined before until I experimented this new version of croquette using tom yam paste  few weeks ago. The tom yam flavor worked immensely in this croquette.Actually,I am a big fan of tom yam, but not those fancy tom yam soup noddle sell around the globe thus the tom yam paste I have at home.I don't know why I'm not fancy about the tom yam soup noodles.

Whatever, the matters is the tom yam paste I have at home are a very charming fellow,work very well in every sort of dish I prepared and this experiments are indeed success.Taste so delight and yummy eventually.

The fried onion gave an another caramelized flavor in it.Over all is awesome I thought.If you thought its look and sound delicious, then give yourself a try and let me know what you think about the croquette.NOTE: I used Cock Brand tom yam paste, use any brand of tom yam paste for instead if you can't find the one I mentioned.


Tom Yam Scented Chicken Croquette
Ingredients:
500g Chicken mince
1/2cup Fried onion
1 big Potato-cut into small pieces
2 Stalk spring onion-chopped
1-2 Red chillies-chopped
2 karrif leave-chopped thinly
1.5tbsp Tom Yam Paste-(add or less as per your taste)
2-3  Bread-Breadcrumbs
1-2  Egg
Salt
Pepper powder
Oil for frying

Srichacha Mayonnaise Sauce
1/4 cup Mayonnaise

Method:

1.Fried the potatoes pieces until golden brown.Drain well on paper towel and keep aside.

2.Heat a pan with a drizzle of oil and sauté the chicken mince,let it cooked thoroughly.Cool it to room temperature.

3.Meanwhile,get the breadcrumbs ready by tear off the bread into small pieces and place them into a food processor and blend to a fine crumbs.Keep one side.Mix the egg in another bowl with fork and keep aside.

4.Add the cooled chicken mince in a big  bowl and place all other ingredients except the breadcrumbs and egg.Seasoned with salt and pepper.Mix well until the tom paste coated thoroughly.

5.Take a small size ball of the mixture,rolled into round and genteelly press to flatted or roll it to any shape as you desire.

6.Dip the flattened mixture in the egg then coated it in breadcrumbs and fry it untill it turn gilden brown and serve the delicious tomyam chicken cutlet with srichacha mayo sauce..See the recipe below.

For the sauce:
Mix the ingredients well and serve.

Hot Milk Cake

 

Sometime I do absents from blogging but its not mean I was free from cooking.Actually, I never stop  experimenting new things and ideas which got stuck on my head and hardly never leave me in peace.I usually get myself busy buzzing around in the kitchen,making new sort of cake and new dishes.Some of those delicacy I tried last time gave me a big satisfaction and  good success indeed.Photos are overloaded immensely and  there a lots of pending post is waiting in my archives,but the experiments nevertheless  continue.Primarily it's help me to increase my knowledge in food culinary,I think.


Lets come to today recipe sharing,Yeah, the sounds "HOT MILK CAKE" is something obviously different and new to me.Actually, I discovered  the recipe in somewhere but I'm not sure where.Hang on one minute, gotcha.I found the recipe at  Taste of Home.com,one my fav food web page.The recipe and the picture are caught my eyes,so I end up tried it.The cake were absolutely okay to me.But I help myself  with a little spread of butter on the cake slice to get a creamy buttery taste.Have those butter spreads hot milk cake with cuppa is made heaven initially.

I made some cupcake too with the same batter for my lit fellow who a are lazy to have a cake as a slice...


Hot Milk Cake
Ingredients

4 eggs
2 cups sugar (I used 1.5 cup)
1.5 teaspoon vanilla extract
2 1/4 cups all-purpose flour
2 1/4 teaspoons baking powder
1 1/4 cups 2% milk
10 tablespoons butter, cubed

Method: 
1. In a large bowl, beat eggs on high speed for 5 minutes or until thick and lemon-colored. Gradually add sugar, beating until mixture is light and fluffy. Beat in vanilla. Combine flour and baking powder; gradually add to batter; beat at low speed until smooth. 

2. In a small saucepan, heat milk and butter just until butter is melted. Gradually add to batter; beat just until combined. 

3. Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

Gorgeous George Pig Cookies


Today I'm going to share a kid's friendly fun post.My son was a die hard fan of Peppa Pig.This Peppa George pig  cartoon  is very famous amongst children's around here.The pretty pink,delightful butter cookies are always a hit with  Peppa Pig and George Pig-lovers,I thought. 

This is one of the precious gift  I made and gifted for my honey pony(my son's new pet name) on his 2nd Birthday.Moreover,I giveaways these George Pig cookies as a party favor to the children who's attended the party last Saturday.

Obviously I tried some other sugar cookie recipe before but this one is my favorite ever.After all its so easy,the dough were so perfect for rolled cookie.The taste was extraordinary very buttery.I happy with the perfection. Sashvik loved the cookie which means a lot to me.





Gorgeous George Pig Cookies 
Butter cookie
Ingredients:
225g Plain (all purpose) Flour
175g Unsalted butter-chilled and diced
130g Caster Sugar
1 Egg yolk


For the decoration:
Apricot preserve
Fondant icing
Icing Sugar for dusting
Red color paste
Black royal icing

Method:
To prepare the cookie:
Preheat the oven to 180c.Grease the baking sheets.
Put the flour and diced butter into a food processor,then process until the mixture resemble fine breadcrumbs.Add the sugar and egg yolk to it and process until the mixture begins to form a ball.Turn the dough out on to a floured surface and knead into a ball,wrap in clear film and chilled for at least 30 minutes.Working in batches,roll out the dough thinly on a floured surface and cut out the piggy shapes using  the template below with sharp knife.Transfer to the baking sheets,spacing them slightly apart.Bake for 10 minutes or until pale golden.Transfer to a wire rack to cool.


To tint the fondant:
Take a handful of fondant and roll it into a ball, kneading until it's soft and pliable.Using a toothpick, add dots of  red color  in several spots.Knead color into your fondant ball (wear food-safe gloves when coloring fondant to keep your hands stain-free).Continue kneading until color is evenly blended ;add a little more color if needed;work until to achieve a light pink color.Take a lime size of the pink fondant, add few dots of red color and work as above to get slightly darker pink for the circle on Goerge's cheek,Wrap the colored  fondant very well in plastic wrap and place in an air-tight box.

To Decorate:
Roll out fondant thinly and cut out the piggy using the template.Brush a thin coat of apricot preserve(heat for few second in microwave) on  the sugar cookie and gently place the piggy fondant on top.With your finger smooth out the edge of the wings.(I ignore it due to tight time)Take a small piece of white fondant and cut out the eyes using a small round cutter and glue it on with a little apricot preserve.Roll the darker pink and cut out slightly big round for the circle on George's cheek and glue it on(use the template or piping tip to cut out the circle).Using black royal icing, squeeze out a dot on the each of the white circle to create the eye of George Pig.Now draw the mouth,nose and and decorate as per the PICTURE 1 using the decorating pen.(I use bright red color).You may use red royal icing to draw the fine lines.Sit out to dry all night on parchment .Fondant shape will harden over night.

Look Who's Turn Two!!!!

  How about some significant cuteness today rather than food and recipe?My handsome little Prince is turns TWO today!!!

 It's very hard to believe that my little baby  is turning two!! I'm amazed  how fast the days fly by since our little man entered to our world.Where the whole two years go :0?I feel a kind of  weird...

 A big thank to god.I felt so blessed  and was so lucky to have him in our lives. He is such a chubby-little smarter,so curios about everything,very energetic without feeling any tidiness,pride and joyful-handsome boy.I love his mesmerizing cheeky smile which make me to die for.He is a miracle which God gave to me gives me strength when I am weak.


Honestly I enjoyed every second of the motherhood and kept all the beautiful memories close to my heart.Every pictures,videos,memories and every single movement of my son were is my life and soul.It's always blooming inner me.

A milestone collections of Sashvik...


A few things  about my cheeky little piggy.He's current favorite food is pizza(if he ask for pizza,I have to feed him at any cost otherwise he kept asking me mum pizza... mum pizza... with a pity voice),black olive,banana and carrot.As per cartoon he never attempt to see different cartoon rather than Peppa Pig,Fireman Sam and Oliver but nowadays he his curious fan of Bob the builder and Dora.His favorite game was playing with building blocks,love to drawing,painting and playing hide and seek(indeed clever).
Well,actually there is no ending I thought,so I have to stop right here and would love wish him A Happy  Birthday and many happy returns of the day.May God bless you with good health and may brings all your wishes to come true.

Here you are a sneak peek of  his FIRST Birthday party.We picked Baby Animals
 theme for his first birthday party.I was hardly created everything to match with the theme.


I did made some royal icing decorated  sugar cookie for giveaway and also made some delicious  animal cupcakes which I decorated with fondant.Could anyone can guess what theme I choose for this year? I choose really interesting theme again this year which Sashvik's fav and he loves it at almost.Hmmm...Please bear with me for the next post of his 2nd Birthday Party...
